When writing an updated schema to SpiceDB, is there a concept of "dry run" to make sure if the new schema version applied will be ok to apply without really applying it ?

no, but we've been discussing the idea of staging schemas for a while now. FWIW the server will refuse to write schemas that drop relationships with data in it.
