Hi, is it possible to run spicedb on a single ec2 instance? instead of eks?

It is possible, but you won't be able to horizontally scale it in a robust way, as it relies on Kubernetes API for peer discovery. If you could run something that supports XDS protocol then you could horizontally scale.
